Unripe (green) bananas are high in resistant starch and low in sugar, which is why they don’t taste so sweet 🍭
Ripe (yellow bananas) have transitioned their resistant starch into simple sugars that are much easier to digest. They also have higher levels of antioxidants as they ripen.
